Ingredients
- 1 lb chicken sausage
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 14.5 oz can diced tomatoes, drained
- 2 quarts chicken stock
- 1/2 cup heavy cream
- 1 cup ditalini pasta
- 1/2 cup freshly grated Parmesan cheese
- Dried basil for seasoning
- Dried oregano for seasoning
- Fresh parsley for garnish
Instructions
- In a large pot over medium heat, brown the chicken sausage until fully cooked. Remove and set aside.
- Sauté the diced onion in the same pot until soft, about 3–4 minutes.
- Add the browned sausage back to the pot along with drained diced tomatoes and chicken stock; simmer for 10 minutes.
- Stir in ditalini pasta and cook until al dente, about 8–10 minutes.
- Lower heat and mix in heavy cream and grated Parmesan until melted and creamy.
- Season to taste with salt and black pepper; garnish with fresh parsley before serving.
