  • 2 cups beef broth (or vegetable broth)
  • 2 cups water
  • 12 oz dried orecchiette or other short cut pasta
  • 1 tbsp apple juice vinegar
  • Salt and freshly ground black pepper to taste

Instructions

  2. Stir in minced garlic, sliced mushrooms, and fresh thyme; sauté for 3–4 minutes.
  3. Deglaze the pan with apple juice vinegar and sprinkle in flour; cook for another 2–3 minutes.
  4. Add beef broth (or vegetable broth) and water; season with salt and pepper. Bring to a boil, then stir in orecchiette.
  5. Cook for 8–10 minutes until al dente, stirring occasionally. Finish by stirring in an additional tablespoon of apple juice vinegar before serving.
