Instructions

  1. Brown the unsalted butter in a medium saucepan over medium heat until deep golden brown. Cool for about 10 minutes.
  2. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  3. In a bowl, whisk together flour, baking soda, cornstarch, and salt; set aside.
  4. In a stand mixer, cream together cooled butter and sugars until light and fluffy.
  5. Add the egg, egg yolk, vanilla extract, and milk; mix until combined.
  6. Gradually incorporate dry ingredients into the wet mixture until just combined.
  7. Fold in chopped bittersweet chocolate.
  8. Scoop dough into balls (about three tablespoons) and chill on sheets for at least 15 minutes before baking.
  9. Bake for approximately 10 minutes; bang on counter thrice then bake an additional 3–4 minutes based on desired texture.
