- 5 tbsp sugar
- 2 1/2 tsp cornstarch
- 3/4 cup graham cracker crumbs
- 2 tbsp sugar
- 3 tbsp butter, melted
- 12 oz cream cheese, room temperature
- 1/2 cup sugar
- 1 1/2 tbsp flour
- 1/4 cup sour cream
- 2 tsp lavender extract
- 1/2 tsp vanilla extract
- 2 large eggs, room temperature
- 1/2 cup heavy whipping cream, cold
- 4 tbsp powdered sugar
- 1/2 tsp vanilla extract
- 12–14 blackberries
Instructions
- For the blackberry topping, puree blackberries, then cook with sugar and cornstarch until thickened. Cool completely.
- Preheat oven to 325°F (162°C). Mix graham cracker crumbs, sugar, and melted butter for the crust; press into lined cupcake pan and bake for 5 minutes.
- Decrease oven temperature to 300°F (148°C). Beat cream cheese with sugar and flour until smooth. Add sour cream, lavender extract, vanilla extract, and eggs one at a time.
- Pour cheesecake batter over cooled crusts and bake for 18-20 minutes. Cool in the oven gradually before refrigerating.
