- 4 slices sourdough bread
- 1/2 cup shredded mozzarella
- 1/4 cup crumbled feta
- 2 tablespoons sun-dried tomatoes, chopped
- 2 tablespoons kalamata olives, chopped
- 1/4 cup roasted red peppers, sliced
- 4–6 fresh basil leaves
- 1 tablespoon butter or olive oil
Instructions
- Preheat skillet to medium heat.
- Layer mozzarella, feta, sun-dried tomatoes, olives, peppers, and basil on bread.
- Close sandwich and butter the outsides.
- Grill 3–4 minutes per side until golden and melted.
- Rest 1 minute, slice, and serve.
