Mediterranean Grilled Cheese

Ingredients

  • 4 slices sourdough bread
  • 1/2 cup shredded mozzarella
  • 1/4 cup crumbled feta
  • 2 tablespoons sun-dried tomatoes, chopped
  • 2 tablespoons kalamata olives, chopped
  • 1/4 cup roasted red peppers, sliced
  • 46 fresh basil leaves
  • 1 tablespoon butter or olive oil

Instructions

  1. Preheat skillet to medium heat.
  2. Layer mozzarella, feta, sun-dried tomatoes, olives, peppers, and basil on bread.
  3. Close sandwich and butter the outsides.
  4. Grill 3–4 minutes per side until golden and melted.
  5. Rest 1 minute, slice, and serve.
