  • 1 1/3 cups water
  • 1 lb turkey sausage (or chicken sausage)
  • 1 cup shredded cheddar cheese
  • 4 eggs (beaten)
  • 1/2 cup maple syrup

  • 1/2 teaspoon pepper

Instructions

  1. Preheat oven to 400°F (200°C) and grease a muffin tin.
  2. In a skillet over medium heat, brown the turkey sausage until fully cooked and set aside.
  3. Scramble the beaten eggs in the same skillet until just cooked, then set aside.
  4. In a mixing bowl, combine pancake mix, water, maple syrup, salt, and pepper. Stir in the cooked sausage, scrambled eggs, and shredded cheese until well blended.
  5. Pour the mixture into the muffin pan using scant 1/4 cups each.
  6. Bake for about 16-18 minutes or until golden and a toothpick inserted comes out clean.
