Instructions

  1. In a small bowl, mix the Italian seasoning, paprika, salt, pepper, and garlic powder. Filet each chicken breast in half evenly. Rub each filet with the seasoning mix.
  2. Heat olive oil in a large skillet over medium-high heat. Cook the chicken fillets for 4-5 minutes on each side until browned and cooked through. Remove the chicken from the skillet and let it cool for at least 5 minutes before slicing into strips. Set aside.
  3. In a large pot, heat oil from sun-dried tomatoes over medium-high heat. Add minced shallots and garlic; cook until tender and fragrant for about 3 minutes. Drain and chop sun-dried tomatoes; add them to the pot and cook for another minute.
  4. Pour in chicken broth, half and half, chopped basil, Italian seasoning, salt, and pepper. Bring to a boil then reduce heat; simmer for just a few minutes.
