Ingredients
- 650 g chicken breast (chopped)
- 1 tbsp olive oil
- 3 garlic cloves (crushed)
- 170 g sun-dried tomatoes (drained)

- 2 tsp paprika
- 250 g orzo
- 650 ml hot chicken stock
- 150 ml double cream
- 120 g spinach
- 50 g parmesan (grated)
Instructions
- In a deep frying pan, heat olive oil over medium heat. Add chopped chicken and cook for about 5 minutes until lightly browned.
- Stir in crushed garlic, sun-dried tomatoes, oregano, and paprika. Cook for an additional 3-5 minutes until fragrant.
- Add orzo to the pan along with hot chicken stock and freshly ground black pepper. Stir well, cover with a lid, and cook for approximately 10 minutes until orzo is nearly cooked through.
- Reduce heat to low and mix in spinach and double cream. Stir until the spinach wilts and the cream is heated through.
- Turn off the heat and fold in grated parmesan until melted.
