  • 2 tablespoons yellow mustard
  • 1 tablespoon hot sauce
  • 1½ teaspoons kosher salt
  • 1½ teaspoons paprika
  • 1 teaspoon garlic powder
  • 1½ cups all-purpose flour
  • ¾ cup cornstarch
  • 8 oz unsalted butter
  • 1 tablespoon lemon pepper seasoning
  • Juice of ½ lemon
  • Zest of ½ lemon
  • 68 cups neutral frying oil

Instructions

  1. In a large bowl, mix chicken wings with mustard, hot sauce, salt, paprika, and garlic powder. Let marinate.
  2. Combine flour, cornstarch, salt, and paprika in another bowl.
  3. Dip marinated wings into the flour mixture and set aside.
  4. Heat oil in a deep frying pot to 350–360°F.
