  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 6 cups chicken broth
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté celery, carrots, and onion in butter and olive oil over medium-high heat for 5-7 minutes until softened.
  2. Stir in minced garlic and cook for about 30 seconds. Add flour, cooking for another minute until golden.
  3. Pour in chicken broth while stirring to dissolve flour. Add Italian seasoning and chicken breasts; bring to a boil.
  4. Reduce heat to low, cover slightly open, and simmer for 15 minutes.
  5. Stir in orzo pasta; cook another 10 minutes until tender.
  6. Remove chicken, chop into bite-sized pieces, return to pot, then add lemon juice, parsley, salt, and pepper before serving.
