Ingredients

Scale
  • 1 cup leftover mashed potatoes (room temperature)
  • 2 large eggs (room temperature)
  • ½ cup butter (melted)
  • ½ cup milk (lukewarm)
  • ½ cup water (lukewarm)
  • 4 ½ cups all-purpose flour
  • 2 ¼ teaspoons instant yeast
  • 2 tablespoons granulated sugar
  • 2 teaspoons salt

Instructions

  1. In a stand mixer bowl with a paddle attachment, combine the mashed potatoes, eggs, melted butter, milk, and water. Mix on medium-low speed until blended.
  2. In a separate bowl, whisk together flour, yeast, sugar, and salt. Gradually add this mixture to the potato mixture until just moistened.
  3. Switch to a dough hook and knead for about 10 minutes until soft but slightly sticky.
  4. Place the dough in an oiled bowl, cover with cling wrap, and let it rise in a warm place until doubled in size (about 1½ hours).
  5. Preheat your oven to 350°F (180°C). Butter a 9×13 inch baking pan.
  6. Divide the risen dough into 12 equal portions and shape into smooth balls. Arrange in the prepared pan.
  7. Cover and let rise again until doubled (about 45-60 minutes).
  8. Brush with egg wash before baking for about 30 minutes or until golden brown.
  9. Cool for 5 minutes before serving.
