- 1.1 pounds beef filet
- 1½ teaspoon salt
- Black pepper (pinch)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 shallot (cut small)
- 4.5 ounces mushrooms (roughly chopped)
- 3 tablespoons parsley (fresh, chopped)
- Salt (pinch)
- ⅛ cup white grape juice (optional)
- 4 tablespoons mustard
- 2 puff pastry sheets
- 1 egg yolk
Instructions
- Season the beef filet with salt and pepper. In a skillet over medium-high heat, sear the beef for 3-4 minutes until browned but not fully cooked. Remove and let rest.
- In the same skillet, melt butter with olive oil and sauté shallots until soft. Add mushrooms, cooking until moisture evaporates. Stir in parsley and optional white grape juice; season with salt.
- Preheat oven to 400°F (200°C). Roll out puff pastry on a floured surface, spread mustard on each sheet, then layer mushroom duxelle followed by the seared beef.
- Wrap the pastry around the filling tightly and seal edges with an egg yolk wash. Place on a baking sheet and brush tops with egg yolk.
- Bake for about 25-30 minutes or until golden brown.
