Ingredients
- 1 red bell pepper
- 1 red onion
- 1 jalapeno
- 16 oz frozen corn
- 4 cups cooked chicken breast
- 1/2 cup light mayo
- 1/2 cup plain nonfat Greek yogurt
- 1 lime (zested and juiced)
- 1 bunch scallions
- 1/2 cup fresh cilantro
- olive oil spray
- 1/2 tsp kosher salt
- 1/2 tsp cumin
- 1 tsp paprika
- 2 tsp chili powder
Instructions
- Preheat the oven to 400°F.
- Chop the red bell pepper, red onion, and jalapeno; place on a sheet pan with frozen corn.
- Spray with olive oil and sprinkle with salt; roast for 20-25 minutes until tender.
- In a mixing bowl, whisk together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, remaining salt, and chili powder.
- Once vegetables cool, chop cooked chicken into bite-sized pieces; combine with dressing and roasted veggies.
- Add chopped scallions and cilantro; gently toss until well mixed.
