  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • 1 lime (zested and juiced)
  • 1 bunch scallions
  • 1/2 cup fresh cilantro
  • olive oil spray
  • 1/2 tsp kosher salt
  • 1/2 tsp cumin
  • 1 tsp paprika
  • 2 tsp chili powder

Instructions

  1. Preheat the oven to 400°F.
  2. Chop the red bell pepper, red onion, and jalapeno; place on a sheet pan with frozen corn.
  3. Spray with olive oil and sprinkle with salt; roast for 20-25 minutes until tender.
  4. In a mixing bowl, whisk together light mayo, Greek yogurt, lime zest and juice, cumin, paprika, remaining salt, and chili powder.
  5. Once vegetables cool, chop cooked chicken into bite-sized pieces; combine with dressing and roasted veggies.
  6. Add chopped scallions and cilantro; gently toss until well mixed.
  7. Serve topped with Cotija cheese.
