Ingredients
- 8 ounces pasta (your choice)
- 2 cups fresh corn kernels (or frozen)
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- ½ cup green onions, chopped
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 clove garlic, minced
- ¼ teaspoon chili powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
- If using fresh corn, boil in water for 3-5 minutes until tender. Drain and cool.
- Dice the red bell pepper and avocado; halve the cherry tomatoes; chop the green onions.
- In a mixing bowl, whisk together olive oil, lime juice, minced garlic, chili powder, salt, and pepper.
- In a large bowl, combine cooked pasta with corn, bell pepper, tomatoes, avocado, and green onions. Pour the dressing over and toss gently until well coated.
