  • 2 cups fresh corn kernels (or frozen)
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • ½ cup green onions, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 clove garlic, minced
  • ¼ teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
  2. If using fresh corn, boil in water for 3-5 minutes until tender. Drain and cool.
  3. Dice the red bell pepper and avocado; halve the cherry tomatoes; chop the green onions.
  4. In a mixing bowl, whisk together olive oil, lime juice, minced garlic, chili powder, salt, and pepper.
  5. In a large bowl, combine cooked pasta with corn, bell pepper, tomatoes, avocado, and green onions. Pour the dressing over and toss gently until well coated.
  6. Chill in the refrigerator for at least 15 minutes before serving.
