- 1 cup shredded cheddar cheese (divided)
- 4 cups cauliflower rice
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 cup chopped spinach, broccoli florets, or sliced mushrooms
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, sauté cauliflower rice in olive oil for 5-7 minutes. Season with garlic powder, onion powder, paprika, salt, and pepper.
- In a mixing bowl, blend shredded chicken with cream cheese and half of the cheddar cheese. Stir in any optional vegetables.
