  • 1 can pineapple chunks or 1½ cups fresh pineapple
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • Fresh chopped cilantro for garnish
  • Aluminum foil sheets

Instructions

  1. Rinse chicken breasts under cold water and pat dry.
  2. If using fresh pineapple, cut it into bite-sized chunks; if using canned, drain well.
  3. Lay out aluminum foil sheets; in each piece, place one chicken breast at the center.
  4. Top each breast with pineapple chunks, red and yellow bell pepper slices, and red onion.

  6. Fold the sides of the foil over to create tightly sealed packets.
