Instructions

Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.

Press hashbrowns into the dish, drizzle with olive oil, and bake for 25-30 minutes until golden.

Sauté spinach until wilted, then drain.

Whisk eggs, milk, salt, and pepper in a bowl.

Layer spinach and tomatoes into the crust, pour egg mixture over, and top with feta.
