  • 2 heads of romaine lettuce, chopped

  • 1/3 cup crumbled feta cheese
  • 2 Persian cucumbers, sliced
  • 34 mini peppers, sliced
  • 2 tbsp toasted pine nuts
  • 1 avocado, diced
  • 1/4 cup plain Greek yogurt
  • 1 tbsp olive oil
  • 2 tbsp cilantro leaves
  • 1/2 tsp minced garlic
  • 1 tbsp lime juice
  • Salt and pepper to taste

Instructions

  1. Make the dressing by blending Greek yogurt, olive oil, cilantro, garlic, lime juice, salt, and pepper until smooth. Adjust seasoning if needed.
  2. After cooking the harissa chicken thighs according to package instructions, let them rest for a few minutes before slicing thinly.
