  • 1 tablespoon rice vinegar
  • 2 tablespoons soy sauce

  • 1/4 cup brown sugar
  • 1/4 teaspoon black pepper
  • 2 cloves garlic
  • 1/2 cup peanut butter
  • 1 tablespoon + 2 teaspoons brown sugar
  • 2 teaspoons Sriracha hot sauce
  • 1/2 cup water
  • 2 tablespoons lime juice
  • 1" piece fresh ginger (peeled and cut in half)
  • Steamed rice
  • Diced daikon (optional)
  • Diced carrots
  • Sliced green onion
  • Fresh cilantro
  • Shredded cabbage
  • Lime wedges

Instructions

  1. Marinate the chicken: Combine minced garlic, lime juice, soy sauce, sesame oil, brown sugar, and black pepper in a bowl. Pour over chicken in a ziplock bag and marinate for at least 3 hours.
  2. Make the peanut sauce: Blend garlic, peanut butter, soy sauce, brown sugar, Sriracha, water, lime juice, and ginger until smooth.
  3. Grill the chicken: Cook marinated chicken on a preheated grill for about 6-7 minutes per side until fully cooked.
