  • 2 tsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 tbsp finely chopped yellow onion
  • 1 clove garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1/2 cup ketchup
  • 1 tsp paprika
  • 2 tsp sriracha
  • 2 tsp hot chili paste (sambal olek or sub sriracha)
  • 1/2 tbsp chili powder
  • 2 tsp mustard

Instructions

  1. In a small saucepan over medium heat, melt butter and sauté onions until tender. Add garlic and cook for another minute. Stir in all barbecue sauce ingredients and simmer for about 15 minutes until thickened. Remove from heat.
  2. Season chicken thighs with olive oil, salt, and pepper on all sides.
  3. Preheat grill to medium-low heat. Place chicken thighs smooth side down on the grill and cook, turning every 3-4 minutes until internal temperature reaches between 165–170°F. Baste with barbecue sauce during the last few turns.
