  • 1 1/2 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, chopped
  • 2 cups fresh spinach leaves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon crushed red pepper flakes, optional
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • Juice of 1 lemon
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced kalamata olives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat 1 tablespoon of olive oil over medium-high heat. Add chicken pieces seasoned with salt and pepper; cook until browned (5-6 minutes). Remove and set aside.
  3. In the same skillet, add the remaining tablespoon of olive oil and sauté chopped onion for about 3 minutes. Stir in minced garlic, red bell pepper, and zucchini; cook for another 4 minutes.
  4. Mix in spinach, oregano, thyme, and optional red pepper flakes until the spinach wilts.
  5. Stir in orzo pasta, chicken broth, and lemon juice; combine well.
  6. Return chicken to the skillet; cover and bake for 25-30 minutes until orzo is cooked through.
  7. Uncover, top with feta cheese and olives, then bake uncovered for an additional 5 minutes.
