Ingredients

- 2 tsp vanilla extract
- 2 large eggs
- 1/2 cup (115g) sour cream
- 1/4 cup + 2 tbsp milk
- 1 1/2 cups (200g) chopped strawberries
- 1 1/4 cups (280g) unsalted butter, room temperature
- 5 cups (575g) powdered sugar
- 1/2 tsp vanilla extract
- Pinch or two of salt
- Strawberries, for decorating
Instructions
- Preheat oven to 350°F (176°C) and prepare a cupcake pan with liners.
- In one bowl, mix together flour, baking powder, baking soda, and salt.
- In another bowl, whisk melted butter, sugar, and vanilla until smooth. Add eggs, sour cream, and milk; mix well.
- Gradually incorporate dry ingredients into wet mixture then fold in chopped strawberries.
- Fill cupcake liners two-thirds full and bake for 18–20 minutes or until a toothpick comes out clean.
- For frosting: puree strawberries, cook down into a reduction, then beat with butter and powdered sugar until creamy.
- Frost cooled cupcakes and optionally top with fresh strawberries.
