Ingredients
- 4 lbs sweet potatoes (washed & cleaned)
- 6–8 Tbsp butter
- 1 tsp minced garlic
- 1/4 C sour cream (room temperature)
- 1/4 C half & half (room temperature)
- Salt & pepper to taste
Instructions
- Peel the sweet potatoes and chop them into 2-inch pieces. In a large pot, add the sweet potato pieces and cover with salted water (about 1 Tbsp of salt). Bring to a boil over medium heat and cook for 15-20 minutes until fork-tender.
- Drain the sweet potatoes in a colander and return them to the warm pot. Add 6 Tbsp of butter.
- Mash the sweet potatoes while mixing in the melted butter using a potato masher. Add more butter if you desire extra richness.
- Stir in minced garlic, salt, pepper, sour cream, and half & half until fully combined. Transfer to a serving bowl and top with additional butter or herbs if desired.
