  • 1 lb ground beef (85% lean)
  • 1 cup Jasmine rice
  • 1 cup full-fat coconut milk
  • 4 cloves minced garlic
  • 2 teaspoons fresh grated ginger
  • 1/4 cup Sriracha or buffalo sauce
  • Fresh green beans
  • 1 tablespoon sesame oil (or olive oil, or avocado oil)
  • 2 tablespoons sesame seeds
  • 3/4 cup water
  • 1 teaspoon kosher salt
  • 1/4 cup panko breadcrumbs (gluten-free if needed)
  • 1/4 cup milk (any kind)
  • 4 scallions (sliced and divided)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon honey
  • 2 teaspoons rice vinegar or apple cider vinegar
  • Red chili flakes or Korean chili crunch to taste

Instructions

  1. Preheat the oven to 425°F and prepare a large sheet pan.
  2. In a skillet, toast sesame oil and sesame seeds; add rinsed Jasmine rice, coconut milk, water, and salt. Cook until liquid is absorbed.
  3. In a bowl, combine panko breadcrumbs with milk. After 5 minutes, mix in ground beef, scallion whites, ginger, garlic, and red pepper flakes.
  4. Form meatballs and place on one side of the sheet pan; add green beans on the other side with olive oil.
  5. Bake for 14–16 minutes until meatballs reach 165°F.
  6. While baking, mix firecracker sauce ingredients in a bowl.
  7. Serve meatballs over coconut rice with green beans and drizzle sauce on top.
