  • 1 lb ground beef
  • 16 small fajita-sized flour tortillas
  • 1 can refried beans
  • 2 cups shredded Colby Jack cheese
  • Taco sauce
  • Diced tomatoes and chopped green onions for garnish

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Add chopped onion and cook until browned; drain excess grease.
  2. Season the beef with salt, pepper, chili powder, cumin, dried cilantro, cayenne, and minced garlic. Stir to combine.
  3. In a medium skillet, heat vegetable oil over medium heat and lightly fry each tortilla until golden brown on both sides.
  4. Spread warm refried beans on each fried tortilla, top with seasoned beef and cheese. Place another tortilla on top, add taco sauce and more cheese.
  5. Preheat the oven to 400°F, place assembled pizzas on a baking sheet, and bake for about 10 minutes until the cheese melts. Garnish with diced tomatoes and green onions before serving.
