  • 2 small onions (finely chopped)
  • 2 garlic cloves (minced)
  • 3 cups Mexican cheese
  • 20 oz red enchilada sauce
  • 8 flour tortillas (810 inch size)

Instructions

  1. Preheat oven to 350°F and spread 1/2 cup of enchilada sauce in the bottom of a baking dish.
  2. In a large skillet, brown the ground beef with chopped onions and minced garlic over medium-high heat until cooked through.
  3. Stir in one cup of enchilada sauce and simmer. Add one cup of cheese and mix until melted.
  4. Divide the beef mixture among tortillas, roll them tightly, and place seam-side down in the baking dish.
