- 2 cups old-fashioned oats (blended into flour)
- 1 1/2 cups grated carrots
- 1/2 cup maple syrup
- 1 cup unsweetened applesauce
- 2 eggs
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease or line an 8×8 pan.
- Blend oats into flour. In a bowl, mix eggs, oil, syrup, applesauce, and vanilla.
- Add oat flour, spices, baking powder, baking soda, and salt.
- Fold in carrots (and optional walnuts or raisins).
- Bake 30–35 minutes until toothpick comes out clean.
- Cool before serving. Add frosting if desired.
