  • 25 ounces tomato basil pasta sauce
  • 28 ounces diced canned tomatoes
  • 4 cups chicken broth (more if you want a thinner soup)
  • 12 lasagna noodles (uncooked and broken into 2" pieces)
  • ½ cup heavy cream (optional)
  • 1 cup shredded mozzarella cheese
  • ½ cup parmesan cheese (freshly grated)
  • ½ cup ricotta cheese
  • 6 tbsp fresh basil (finely chopped)

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Sauté finely diced onion until soft.
  2. Add ground beef and cook until browned. Stir in garlic, red pepper flakes, salt, oregano, and tomato paste.
  3. Pour in tomato sauce, diced tomatoes, and chicken broth; bring to a boil. Add broken lasagna noodles and simmer until noodles are tender.
  4. If desired, stir in heavy cream for extra richness. Adjust soup thickness with more chicken broth if needed.
  5. Serve hot in bowls topped with ricotta cheese, mozzarella cheese, parmesan cheese, and fresh basil.
