  • 4 boneless center cut beef loin chops (3/4-inch to 1-inch thick)
  • 5 cups herbed seasoned bread stuffing mix
  • 2 cups chicken stock or broth
  • 1 can (10 oz) condensed cream of mushroom soup
  • 1/4 cup diced onion
  • 1/2 cup diced celery
  • 1/4 tsp ground sage
  • 1/4 tsp dried thyme
  • 1/2 tsp kosher salt
  • 1/8 tsp fresh ground black pepper
  • smoked paprika
  • 4 TBSP unsalted butter, divided
  • 2 TBSP chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Spray a 9-inch baking dish with cooking spray.
  2. Season the beef chops with ground sage, thyme, salt, and pepper.
  3. In a large saucepan, melt 1 tablespoon of butter over medium heat; sauté diced onion and celery until softened.
  4. Stir in chicken stock and remaining butter; simmer briefly before adding the stuffing mix.
  5. Spoon stuffing into the baking dish; place seasoned beef chops on top.
  6. Spread cream of mushroom soup evenly over the beef; sprinkle with smoked paprika.
  7. Cover with foil and bake for 20 minutes; remove foil and bake an additional 5–10 minutes until internal temperature reaches 145°F (63°C).
