  • 8 ounces ditalini or elbow macaroni
  • 3/4 cup mayonnaise

  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon smoked paprika

  • 2 tablespoons red onion, finely chopped
  • 2 tablespoons green onions

Instructions

  1. Cook pasta according to package instructions, adding salt to the boiling water. Drain and cool.
  2. Peel hardboiled eggs; separate yolks from whites. Chop whites and crush yolks into a mixing bowl.
  3. In the bowl with yolks, add mayonnaise, Dijon mustard, vinegar (or lemon juice), garlic, salt, smoked paprika, and cayenne pepper. Whisk until smooth.
