  • 4 scallions (white and green parts separated), chopped
  • ½ cup cremini mushrooms, chopped

  • 3 cups vegetable broth
  • 1 cup coconut milk
  • 1 bag frozen vegan dumplings (about 1215 dumplings)

Instructions

  2. Add mushrooms and garlic; cook until tender.
  3. Stir in red Thai curry paste and salt; bloom for one minute.
  4. Pour in vegetable broth, coconut milk, soy sauce, and sugar; bring to a simmer.
  5. Add frozen dumplings; cook according to package instructions until heated through.
  6. Adjust seasoning as needed before serving.
