- 1/2 cup brown sugar
- 5 oz pumpkin puree
- 2/3 cup heavy cream (cold)
- 1 tbsp white sugar
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice
- Orange gel food coloring
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, cream together softened butter, oil, granulated sugar, and powdered sugar until fluffy. Mix in the egg and vanilla until well combined.
- Gradually mix in flour, salt, and baking powder until just combined. Scoop out cookie dough onto the baking sheet and flatten each ball to about 1 inch thick.
- Press down the center of each cookie with a measuring cup to create space for the filling.
- In another bowl, mix cream cheese, brown sugar, and pumpkin puree until smooth. Fill each cookie indentation with the mixture.
