- 1 (10 oz) can Rotel (strained)
- Juice of 1 lime
- Tortillas for serving
Instructions
- Spray a 6 or 7-quart crockpot with non-stick spray.
- Place chicken in the bottom of the crockpot and sprinkle with taco seasoning.
- Top with Rotel and squeeze lime juice over everything.
- Cover and cook on high for 3-4 hours or low for 7-8 hours until chicken is cooked through and easy to shred.
- Drain excess liquid, leaving about half a cup, and shred chicken in the crockpot using two forks.
- Warm tortillas as desired and fill with shredded chicken and your favorite toppings.
