  • 1 can (15.25 ounces) sweet corn (drained)
  • 1 can (10 ounces) green enchilada sauce
  • 2 cans (14 ounces each) chicken broth
  • 1 packet (1 ounce) taco seasoning
  • 1 can (6 ounces) tomato paste
  • 2 tablespoons cornstarch + 2 tablespoons water

Instructions

  1. Brown the ground beef in a large skillet until fully cooked. Drain excess fat and transfer to a greased crock pot.
  2. In the crock pot, combine the black beans, pinto beans, diced tomatoes, corn, green enchilada sauce, chicken broth, taco seasoning, and tomato paste. Stir well to mix.
  3. Cover and cook on low heat for about 3 to 6 hours.
  4. To thicken the soup, mix cornstarch with water to create a slurry and stir it into the soup. Cook for an additional 30 minutes until thickened.
