- 1 lb chicken tenders
- 1 cup shredded coconut (unsweetened preferred)
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- ½ cup all-purpose flour
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Set up 3 bowls: flour mixture, beaten eggs, and panko + coconut blend.
- Coat chicken in flour, dip in egg, and roll in coconut mixture.
- Place on parchment-lined tray, bake for 20-25 minutes, flipping halfway.
- Serve hot with your favorite dipping sauce.
