Ingredients

  • 1 cup shredded coconut (unsweetened preferred)
  • 1 cup panko breadcrumbs
  • 2 eggs, beaten
  • ½ cup all-purpose flour
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Set up 3 bowls: flour mixture, beaten eggs, and panko + coconut blend.
  3. Coat chicken in flour, dip in egg, and roll in coconut mixture.
  4. Place on parchment-lined tray, bake for 20-25 minutes, flipping halfway.
  5. Serve hot with your favorite dipping sauce.
