Ingredients

- ⅓ cup plus 1 tbsp whole milk
- 1 tbsp sunflower oil
Instructions
- Preheat oven to 350°F. Line a muffin pan with paper liners.
- Prepare the pastry cream according to your favorite recipe and chill for at least four hours.
- In a bowl, sift together flour, cornstarch, baking powder, and salt. Set aside.
- Beat softened butter and granulated sugar until fluffy. Add eggs one at a time; mix well.
- Alternate adding the flour mixture and milk/oil mixture until just combined.
- Fill muffin cups two-thirds full; bake for 18–20 minutes until golden brown.
- Cool cupcakes completely before filling them with chilled pastry cream.
- Dip tops in coarse sugar and use a kitchen torch to caramelize just before serving.
