  • 1214 cloves garlic
  • 500 g potatoes
  • 250350 ml vegetable broth
  • 60 ml soy or oat cream
  • 60 g olive oil
  • sea salt
  • black pepper
  • 24 slices old bread

Instructions

  1. Preheat your oven to 200°C (400°F). Place peeled garlic on a baking sheet, drizzle with olive oil, and roast for about 20 minutes until golden brown.
  2. In a large pot over medium heat, sauté chopped potatoes in olive oil until slightly soft. Cover with water and add vegetable broth; bring to a boil, then simmer until potatoes are tender.
  3. Add roasted garlic to the pot and blend until smooth using an immersion blender. Stir in soy or oat cream, nutritional yeast, onion powder (if using), sea salt, and black pepper.
  4. For croutons, cut old bread into cubes, toss with olive oil, season with salt and pepper, and bake at 200°C (400°F) for about 10 minutes until golden brown.
