Ingredients
- 1 tablespoon olive oil
- 400 g (1 lb) chicken sausage, casings removed and cut into chunks
- 1 medium onion, finely diced
- 1 medium carrot, diced
- 2 celery sticks, diced
- 2 large garlic cloves, minced
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red chilli flakes
- 75 ml (1/3 cup) white grape juice
- 1 litre (4 cups) chicken stock
- 150 ml (3/4 cup) double cream
- 500 g gnocchi
- A handful baby spinach
- 30 g (1/4 cup) freshly grated Parmesan
Instructions
- Heat olive oil in a heavy-bottomed pot over medium-high heat. Add chicken sausage and cook for 4-5 minutes until browned.
- Stir in onion, carrot, and celery; sauté for an additional 2-3 minutes. Add garlic, Italian seasoning, and red chilli flakes; cook until fragrant.
- Pour in white grape juice and let it reduce for one minute. Add chicken stock and bring to a boil; then simmer for about 10 minutes.
- Mix in double cream and add gnocchi; cook according to package instructions until tender.
- Fold in baby spinach and grated Parmesan cheese. Taste and adjust seasoning before serving.
