  • 1 cup diced potatoes (peeled or unpeeled)

  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the ground beef until no longer pink. Drain any excess fat.
  2. Add diced onion and minced garlic; sauté until the onion is translucent.
  3. Pour in the beef broth and add diced tomatoes, corn, black beans, and potatoes along with spices. Bring to a boil.
