  • 2 cups fresh spinach
  • 1.5 cups heavy cream
  • 1 cup shredded Parmesan cheese
  • 10 oz. penne pasta
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • 1 1/2 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 2 tablespoons parsley (chopped) for garnish

Instructions

  1. Cook the penne pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil. Season the chicken with salt, pepper, and garlic powder, then cook until browned and fully cooked (about 7–8 minutes per side). Remove from skillet and let rest before slicing.
  3. In the same skillet, reduce heat to medium-low and add butter with minced garlic. Sauté until fragrant (about 30 seconds). Add diced tomatoes, spinach, paprika, Italian seasoning, crushed red pepper flakes, and additional salt; cook until spinach wilts.
  4. Stir in heavy cream and let it simmer gently for about 3–5 minutes until slightly thickened. Mix in shredded Parmesan cheese until melted.
  5. Slice the cooked chicken and return it to the skillet along with the drained pasta; toss until well combined with the sauce. Serve hot garnished with extra cheese or chopped parsley.
