Creamy Broccoli Pasta – One Pot!

Ingredients

  • 8 oz penne or rotini pasta
  • 3 cups broccoli florets
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Heat oil or butter in a large pot, sauté minced garlic for 1-2 minutes.
  2. Add pasta and broth, bring to boil, reduce to simmer.
  3. Stir in broccoli halfway through pasta cooking.
  4. Once pasta is tender, mix in cream and Parmesan.
  5. Season with salt and pepper, serve warm.
