  • 1 cup (226 g) unsalted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla
  • 3 1/4 cups (405 g) all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup (133 g) granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk or heavy cream
  • 1/2 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8 x 8-inch baking pan with parchment paper.
  2. In a stand mixer, cream together butter, granulated sugar, and light brown sugar until fluffy. Add egg and vanilla, mixing until combined.
  3. In another bowl, whisk flour, baking powder, cinnamon, and salt. Gradually add dry ingredients to wet mixture until just combined.
  4. Reserve 2 cups of dough for topping and press the remaining dough into the prepared baking pan. Bake for 15 minutes.
  5. Prepare the cranberry filling by mixing cranberries, granulated sugar, cornstarch, orange zest and juice, and vanilla in a bowl before pouring it over the pre-baked crust.
  6. Crumble reserved dough over the filling and bake for an additional 45 minutes.
  7. Allow to cool completely before glazing with a mix of powdered sugar and milk.
