  • 32 ounces Velveeta cheese (cubed)
  • 8 ounces shredded taco cheese blend
  • 8 ounces cream cheese (cubed)
  • 2 cans (10 oz each) Rotel
  • 1 can (15 oz) corn (drained)
  • 1 can (15 oz) black beans (drained & rinsed)
  • 1/2 cup finely chopped red onion
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. In a large cast iron skillet, cook and crumble the ground beef over medium-high heat until no longer pink. Drain excess grease.
  2. Reduce heat to medium-low and add Velveeta, shredded taco cheese blend, and cream cheese. Stir until melted and smooth.
  3. Stir in corn, Rotel, black beans, red onion, and lime juice. Cook for about 5 minutes until heated through.
  4. Garnish with chopped cilantro and serve hot with tortilla chips or Fritos.
