- 1 (14 oz) can of tomatoes, drained & chopped
- 3 tbsp olive oil
- 5 cups water
- 2 cups chicken broth
- 2 cups shredded chicken
- 2 cups cooked ditali pasta
Instructions
- Dice all the vegetables for even cooking.
- In a large pot over medium heat, add olive oil and sauté celery, carrot, onion, red pepper, and potato until softened (about 5 minutes).
- Stir in garlic, parsley, oregano, and red pepper flakes; cook until fragrant (about 1 minute).
- Pour in water and chicken broth; bring to a boil.
- Reduce heat to low and stir in shredded chicken and cooked pasta; simmer for an additional 10 minutes.
