  • 1 tablespoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 2/3 cup whole milk (room temperature)
  • 1/3 cup vegetable oil
  • 1/3 cup plain yogurt
  • 1 large egg (room temperature)
  • 1 and 1/2 teaspoons pure vanilla extract
  • Optional: vanilla icing

Instructions

  1. Preheat your oven to 350°F (177°C). Grease a loaf pan generously.
  2. In a small bowl, mix together the granulated sugar and ground cinnamon; set aside.
  3. In a large bowl, combine flour, baking soda, and salt.
  4. In another bowl, whisk together the remaining sugar, milk, vegetable oil, yogurt, egg, and vanilla extract. Add this mixture to the dry ingredients and stir until just combined.
  5. Pour half of the batter into the prepared pan. Sprinkle most of the cinnamon-sugar mixture on top, then add the rest of the batter over it. Sprinkle with remaining cinnamon-sugar.
  6. Using a knife, gently swirl through the batter to create a marbled effect without over-mixing.
  7. Bake for 50–65 minutes (longer for an 8×4-inch pan) until a toothpick comes out clean.
  8. Let cool in the pan for about an hour before transferring to a cooling rack.
