  • 1 1/2 cups Cake Flour
  • 2 tsp. corn starch
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cold, unsalted butter, cubed (16 Tbsp.)
  • 1 1/4 cup granulated sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 tsp. vanilla extract
  • 1 cup packed brown sugar (light or dark)
  • 6 Tbsp. softened butter
  • 2 Tbsp. cinnamon
  • 8 oz. cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 1/2 tsp. salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, mix brown sugar, softened butter, and cinnamon for the filling.
  3. In a large bowl, combine all-purpose flour, cake flour, corn starch, baking soda, baking powder, and salt; set aside.
  4. In a stand mixer, cream together cold butter and granulated sugar until smooth. Add eggs and vanilla; blend well.
  5. Gradually incorporate the dry ingredients into the wet mixture until combined.
  6. Roll out the dough into a rectangle, spread the cinnamon filling evenly over it, then roll it up tightly into a log shape.
  7. Cut into 10-12 pieces and bake for 9–11 minutes until lightly golden.
  8. For the frosting, beat together softened cream cheese and butter with powdered sugar until smooth; frost cooled cookies.
