- 1/2 cup melted unsalted brown butter
- 2 cups diced apples
- 1/4 cup packed light brown sugar

- 1 tbsp pure vanilla extract
- 2 tbsp apple cider reduction
- 2 tsp cornstarch
- 2 tsp water
Instructions
- Preheat oven to 350°F (175°C) and line muffin tin with cupcake liners.
- In a saucepan, melt butter over medium heat, add diced apples, brown sugar, cinnamon, apple cider reduction, cornstarch mixed with water. Cook until apples soften (5-7 minutes), then cool.
- In a large bowl, cream melted brown butter with sugars until fluffy. Beat in eggs and vanilla extract.
- In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to wet mixture alternately with cooled apple mixture until combined.
- Fill muffin tins two-thirds full and bake for 20-25 minutes or until a toothpick comes out clean.
- Cool for 10 minutes before transferring to wire racks.
