- 3 cups chicken broth
- 4 cups diced potatoes
- 12 ounces pepper jack Velveeta cheese
- 1½ cups milk
- 4 tablespoons butter (divided)
- 1 teaspoon dried basil
- 1 teaspoon dried parsley flakes
- 2 cloves garlic
- ¼ cup all-purpose flour
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup sour cream
Instructions
- In a 3-quart saucepan, brown the ground beef over medium-high heat and drain excess fat.
- Add butter to the pan and sauté onion, carrots, celery, basil, and parsley until tender (about 10 minutes). Stir in minced garlic and cook for an additional minute.
- Pour in chicken broth and add diced potatoes along with the browned beef. Bring to a boil, then reduce heat to simmer for 10-12 minutes until potatoes are tender.
- In a small skillet, melt remaining butter and whisk in flour to create a roux; cook for about 3-5 minutes until bubbly. Stir this roux into the soup and bring to a boil again.
