Ingredients
- 18 TBSP Unsalted butter (1 cup plus 2 tbsp)
- 2 2/3 cups All-purpose flour
- 1 TBSP Cornstarch
- 1 tsp Baking soda
- 1 tsp Salt
- 2 tsp Ground cinnamon
- 1 tsp Ground ginger
- 1/4 tsp Ground nutmeg
- 1/2 tsp Cardamom
- 1/4 tsp Ground cloves
- 1 1/2 cups White granulated sugar
- 2 Large eggs (room temperature)
- 1 tsp Pure vanilla extract
- 1/2 cup White granulated sugar (for coating)
- 1 tsp Ground cinnamon (for coating)
- 1/2 tsp Ground ginger (for coating)
- 1/4 tsp Ground nutmeg (for coating)
- 1/4 tsp Cardamom (for coating)
- 1/4 tsp Ground cloves (for coating)
Instructions
- In a frying pan, melt the unsalted butter over medium heat until it turns amber in color. Let it cool for 40 minutes.
- In a separate bowl, sift together flour, cornstarch, baking soda, salt, and spices.
- In a mixing bowl, whisk cooled brown butter with sugar, eggs, and vanilla until combined.
- Gradually mix in the dry ingredients with a rubber spatula until a thick dough forms.
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper. Let dough rest for 10 minutes.
- Prepare chai sugar by mixing sugar and spices in a bowl.
- Scoop dough into balls, roll in chai sugar, and place on baking sheets.
- Bake for 13–15 minutes until edges are golden. Cool on the pan for 6 minutes before transferring to a wire rack.
