  • 6 oz Cream cheese (room temperature)
  • 3 TBSP White granulated sugar
  • 1 tsp Pure vanilla extract
  • 3 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 2 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1 cup Unsalted butter (melted and cooled)
  • 1 cup Brown sugar (packed light or dark)
  • 1/2 cup White granulated sugar
  • 1 cup Finely grated carrots (Make sure to grate them fresh. Don't use pre-shredded)
  • 2 Large egg yolks (room temperature)
  • 2 oz Cream cheese (room temperature)
  • 2 TBSP Unsalted butter (room temperature)
  • 3/4 cup Powdered sugar (sifted)
  • 1 tsp Pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract until smooth. Set aside.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. In a separate large bowl, mix melted butter with brown sugar and granulated sugar until well blended. Add egg yolks and mix thoroughly.
  5. Gradually add dry ingredients to wet ingredients until combined. Fold in grated carrots.
  6. Scoop portions of dough, flatten slightly, place a teaspoon of cream cheese filling in the center, and fold dough around it to seal.
  7. Bake on prepared sheets for 12-15 minutes until golden around the edges but still soft in the center.
  8. Cool on wire racks before frosting with remaining cream cheese mixture if desired.
